Grain-Free Waffles

These Grain-Free Waffles were a big hit for mothers day brunch. We tripled the batch to feed 8 people, and have plenty of left overs to freeze! A double batch would have been plenty!
This recipe is made Gluten-Free, Grain-Free and Refined Sugar-Free, with the option of making them completely Paleo, and substituting the Grass-fed butter for Coconut Oil! You also have the option of Subbing the eggs for Vegan Eggs too!
This recipe is incredibly easy to make, taste delicious and the waffles are fluffy, yet moist enough to not have to drench it in syrup (unless you want to of course!)

What You Need to Make these Delicious Grain-Free Waffles:
- Waffle Maker
- Almond Flour
- Tapioca Flour
- Monk Fruit Sweetener
- Baking Soda
- Full Fat Coconut Milk or Milk of Choice
- Grass-fed Butter or Coconut Oil
- Eggs (preferably fresh & local!)
- Vanilla Extract
Grain-Free Waffles
Equipment
- Waffle Maker
Ingredients
- 1½ Cup Almond Flour
- ½ Cup Tapioca Flour (Arrowroot for Substitute)
- ¼ Cup Monk Fruit Sweetener
- ½ Tsp Baking Soda
- ½ Cup Full Fat Coconut Milk Or Almond Milk (or other milk of choice)
- ¼ Cup Butter Melted (Melted Coconut Oil if Paleo)
- 3 Eggs Whisked
- 2 Tsp Vanilla Extract (Or Almond Extract)
Instructions
- Preheat your waffle maker
- In a large bowl whisk together almond flour, tapioca flour, baking soda, and monk fruit sweetener.
- Add milk and butter (oil). Mix until combined.
- Add whisked eggs and vanilla extract.
- If necessary, spray your waffle maker with avocado oil, and toast waffles according to your waffle makers manufacturers instruction. Usually 3-5 minutes to cook the waffles, and I measure a heaping ⅓ cup of waffle mix onto my waffle maker, but yours may be different!

My sister and brother-in-law bought me my Waffle Maker for my birthday, and it has been the best gift ever! You don’t need anything glamorous to make grain-free waffles, just make sure to spray your waffle maker with enough oil so your waffles don’t stick!

Why We Follow Paleo
John has Ulcerative Colitis which is an inflammatory bowel disease (IBD) that causes long-lasting inflammation and ulcers (sores) in his digestive tract. Ulcerative colitis affects the innermost lining of your large intestine and rectum. He has suffered from this for most of his life.
So, in 2016 John and I finished building our house and began living on our own. Finally, we decided, this is a fresh start for us, for our health. and for our relationship. We started looking into diets that would accompany both of us. From Vegan to Vegetarian to Dairy-Free and then to a High Meat Diet (Before Keto was a big trend!). Some of the diets, we probably didn’t stick too long enough to reap the benefits- but they didn’t all suit John and I! Many countless hours of internet research, listening to well-known doctors and podcasts, they all had different input. After listening and reading about many holistic doctors, we started to look more into the Paleo diet.
