Paleo Zucchini Banana Bread
An easy, one-bowl, Paleo Zucchini Banana Bread made with almond flour and ground flaxseed
made gluten-free and dairy-free.

Ingredients you’ll need to make the best paleo zucchini bread!
** Organic/Locally grown zucchini – Shred, either using something like a cheese grater, or a food processor, then be sure to squeeze out all of the excess moisture!!
** Ripe bananas – MASHED
** Free-Range/Pasture-raised/Organic/Local eggs
** Maple Syrup for added sweetness!
** Almond Flour
** Flaxseed Meal
** Baking Soda
** Cinnamon
** Optional Dark Chocolate Chips
Parchment Paper or Coconut Oil so the bread doesn’t stick to the Loaf Pan!

Paleo Zucchini Banana Bread
Ingredients
- 2 Banana's Mashed
- 2 Cups Zucchini Shredded and Processed, Excess Moisture Squeezed Out
- 2 Egg
- ¼ Cup Maple Syrup Or regular refined sugar or coconut sugar will work!
- 2 Cups Almond Flour
- ½ Cup Flaxseed Meal
- 1 Tsp Baking Soda
- 1 Tsp Cinnamon
- Dark Chocolate Chips Optional
Instructions
- Preheat oven to 350° and grease loaf pan (with Coconut Oil)
- Add Mashed Bananas, Shredded Zucchini, Eggs, and Maple Syrup to a medium bowl, mix together
- Then add Almond Flour, Flaxseed Meal, Baking Soda, and Cinnamon, and mix until well combined
- If using, stir in the Dark Chocolate Chips!
- Add Batter to loaf pan and spread evenly
- Bake for 50 minutes (Checking Regularly)
- Let cool for 10-15 minutes & Enjoy!
