  1. Remove the thick cream from the top of the chilled coconut milk and place in a mixing bowl.
  2. Use a whisk, hand mixer, or stand mixer to beat until light and fluffy. Add sweetener and vanilla, and continue beating until mixed.
  3. Cover and refrigerate until ready to use.

Ingredients
  

Apple Filling

  • 1 tbsp Coconut Oil or Butter
  • 6 Apples Peeled (Optional), Cored, and Cubed
  • 2 tbsp Maple Syrup or Sweetener of Choice
  • 1 tbsp Lemon Juice
  • 2 tsp Cinnamon

The Crust

  • 4 tbsp Coconut Oil or Butter Melted
  • 3 tbsp Maple Syrup or Sweetener of Choice
  • 1 tsp Vanilla Extract
  • 1 Egg
  • ½ cup Almond Flour or GF Flour
  • pinch Himalayan Salt or Sea Salt

Coconut Whipped Cream (Optional)

  • 1 14-ounce can Full-Fat Coconut Milk or Coconut Cream (Chilled)·     
  • 1 Tsp Maple Syrup or Honey
  • 1 tsp Vanilla Extract

Instructions
 

  • Preheated oven to 350℉

Apple Filling

  •  Melt Coconut Oil/Butter in a skillet over medium-high heat.
  • Add the apples, sweetener, and lemon juice.
  • Cook until the apples have softened, and the juices have been released and thickened.
  • Add Cinnamon and remove from heat.

The Crust

Coconut Whipped Cream (Optional)

  • Remove the thick cream on the top from the coconut milk (or buy coconut cream) and place in a mixing bowl! (The remainder of the can, can be refrigerated and used later)
  • Use a whisk, hand mixer, or stand mixer to beat until light and fluffy. Scrape down the bowl.
  • Add sweetener and vanilla extract and continue beating until mixed.
  • Cover and put in the refrigerator until ready to use!

Putting it ALL Together

  • Make sure the oven is preheated to 350℉.
  •  Fill each jar ½ full of the apple filling – and pack down with a spoon.
  • Add equal amounts of the crust mixture to each jar, and smooth out.
  • Put the Mason Jars on a tray and cook until the crust has started to bubble, rise, and brown, similar to a muffin or biscuit! (About 20 minutes!)
  • Let cool, top with homemade or store-bought whipped cream and a dash of cinnamon (optional), seal, and place in your travel cooler to enjoy in the backcountry!
